Savory Chicken and Lemon Herb Cabbage Skillet
Ingredients (Serves 4–6):
Whole Chicken (4–4.5 lbs) – $3.99
Yellow Lemon (per lb) – $0.89
Dill & Mint (per bunch) – $0.50
Red & Green Cabbage (per lb) – $0.79
Small Potato Bag – $1.99
Sadaf Avocado Oil (2L) – $15.99
Salt, pepper, and garlic powder (from your pantry)
Instructions:
Prep the Chicken:
Rinse the Whole Chicken and pat dry.
Season with salt, pepper, and garlic powder inside and out.
Sear the Chicken:
Heat 2 tablespoons of Sadaf Avocado Oil in a large skillet over medium heat.
Sear the chicken on all sides until golden brown, about 5–7 minutes per side.
Prepare the Veggies:
While the chicken sears, chop the Red & Green Cabbage into thin slices.
Dice the potatoes into small cubes.
Thinly slice a Yellow Lemon and set aside.
Cook the Skillet:
Remove the chicken from the skillet and set aside.
In the same skillet, add a splash more Sadaf Avocado Oil, followed by the cabbage and potatoes.
Cook until the cabbage wilts slightly and the potatoes start to soften, about 5 minutes.
Combine and Roast:
Nestle the chicken back into the skillet on top of the veggies.
Squeeze half a Yellow Lemon over the entire dish and lay lemon slices on top of the chicken.
Cover and cook over medium heat for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F.
Finish with Fresh Herbs:
Sprinkle chopped Dill over the dish before serving for a fresh, herbaceous finish.
