1. Lemon Garlic Chicken Cutlets with Roasted Vegetables

Ingredients:

  • 1 lb Chicken Cutlets (Special: $7.99)

  • 1 Yellow Lemon, juiced and zested (Special: $0.99/lb)

  • 2 cloves Garlic, minced

  • 2 tbsp Olive Oil (Special: Jasmine Gourmet XT Virgin Olive Oil - $11.99)

  • 1 tsp Paprika

  • 1 tsp Salt

  • ½ tsp Black Pepper

  • ½ tsp Dried Oregano

  • 1 Russet Potato, diced (Special: $0.50/lb)

  • 1 Potato Yam, diced (Special: $1.29/lb)

  • 1 tbsp Fresh Parsley, chopped (optional)

Instructions:

  1. Preheat the oven to 400°F.

  2. In a bowl, mix lemon juice, lemon zest, minced garlic, olive oil, paprika, salt, pepper, and oregano.

  3. Coat the chicken cutlets with the mixture and let them marinate for 15 minutes.

  4. On a baking sheet, toss the diced russet potatoes and potato yams with olive oil, salt, and pepper.

  5. Roast the vegetables for 15 minutes, then add the chicken to the same sheet.

  6. Roast for an additional 15-20 minutes until the chicken is cooked through and the vegetables are tender.

  7. Garnish with fresh parsley and serve hot.

2. Mediterranean Hummus & Chicken Wraps

Ingredients:

  • ½ cup Holy Hummus (Special: $3.99)

  • ½ tsp Paprika

  • ½ tsp Salt

  • ÂĽ tsp Black Pepper

  • 1 small Cucumber, diced

  • ½ Red Onion, sliced

  • ½ cup Cherry Tomatoes, halved

  • ÂĽ cup Feta Cheese, crumbled (optional)

Instructions:

  1. Heat olive oil in a pan and grill the chicken cutlets with salt, pepper, paprika, and lemon juice until golden brown. Slice into strips.

  2. Warm the pita bread in a dry pan for a few seconds on each side.

  3. Spread a generous layer of hummus on each pita.

  4. Top with sliced grilled chicken, cucumbers, tomatoes, red onions, and crumbled feta.

  5. Fold or roll the pita and serve with a side of extra hummus or lemon wedges.
